mashed potatoes with creamed spinach and sunny side up eggs

Zutaten

  • for the spinach:
  • 1 tbsp. oil
  • 1 small onion diced
  • 750 g spinach I use frozen
  • 100 ml cream
  • 1/2 tsp. nutmeg
  • salt and pepper to taste
  • for the mashed potatoes
  • 1,5 kg potatoes
  • 175 ml milk skimmed
  • 50 ml cream
  • 20 g butter
  • nutmeg salt and pepper to taste
  • 9 eggs - of course you can put as many eggs as you wish. The nutrition info is valid for the amounts in this recipe

Anleitungen

  • first peel and cut the potatoes and put them into salted water on the stove to cook
  • while the potatoes cook, you can prepare the spinach
  • Creamed spinach
  • defrost the spinach and squeeze out the biggest part of the fluid, but leave some.
  • now heat up the oil in a pan and glaze the onions for 2-3 minutes.
  • Now add the spinach and cook another 1-2 minutes
  • stir in the cream and add nutmeg, salt and pepper to taste.
  • Fill the spinach into an oven pan and press lightly flat
  • Now the potates should be cooked.
  • Preheat the oven to 180° degrees celsius.

  • when the potatoes are cooked, pour away the water and dry the potatoes by putting the pot back on the stove a couple of times and toss the potatoes in the pot around until they are "dry"
  • Now add milk, cream, butter and nutmeg and mash. Add more salt if necessary.
  • Spread the mashed potatoes on top of the spinach and pitch the eggs right in top of the potatoes. Add salt and pepper and put the pan in the oven.
  • depending on how you like your eggs, leave the pan for around 10-15 minutes. Just check, if the egg whites are already solid - if you mind wobbly eggwhites as I do :-)
