first peel and cut the potatoes and put them into salted water on the stove to cook
while the potatoes cook, you can prepare the spinach
Creamed spinach
defrost the spinach and squeeze out the biggest part of the fluid, but leave some.
now heat up the oil in a pan and glaze the onions for 2-3 minutes.
Now add the spinach and cook another 1-2 minutes
stir in the cream and add nutmeg, salt and pepper to taste.
Fill the spinach into an oven pan and press lightly flat
Now the potates should be cooked.
Preheat the oven to 180° degrees celsius.
mashed potatoes
when the potatoes are cooked, pour away the water and dry the potatoes by putting the pot back on the stove a couple of times and toss the potatoes in the pot around until they are "dry"
Now add milk, cream, butter and nutmeg and mash. Add more salt if necessary.
Spread the mashed potatoes on top of the spinach and pitch the eggs right in top of the potatoes. Add salt and pepper and put the pan in the oven.
depending on how you like your eggs, leave the pan for around 10-15 minutes. Just check, if the egg whites are already solid - if you mind wobbly eggwhites as I do :-)
