broccoli-tarragon-soup with cheese-balls

  • for the soup:
  • 1 tbsp. olive oil
  • 1 kg broccoli I use frozen
  • 1 large onion diced
  • 2 garlic cloves diced or pressed
  • 1,2 liter vegetable broth
  • 1- 1,5 tsp.tarragon dried
  • salt pepper, chili to taste
  • for the cheese balls:
  • 2 tbsp. grated parmesan
  • 2 tbsp. cottage cheese
  • 1 tbsp curd
  • 2 tbsp. flour
  • 1/2 tsp. tarragon
  • salt and pepper to taste


  1. heat the oil in a pot that can hold at least 3 liters and glaze the onion and the garlic
  2. after 2-3 minutes add the tarragon and let it roast a bit.
  3. add the potatoes and let them also roast for 2 minutes.
  4. add the broccoli and then also the broth.
  5. bring to boil and let it cook for around 10 minutes until the broccoli is cooked.
  6. meanwhile mix the ingredients for the cheese-balls in a foodprocessor and set to cool in the fridge.
  7. when the soup is cooked mix it with an immersion blender
  8. form little balls with two tablespoons and add serve them with the soup. They will melt a bit into the soup and combined it will create a great flavour
  9. If you want it to be a bit more creamy and thick, you can add two potatoes and also cook and mix them with the other ingredients
