Brokkoli-Käsesuppe mit Hackfleisch
- 1 kg broccoli here frozen
- 250 g potatoes cut in small cubes
- 400 g lean ground meat here pork and beef
- 1,2 liters vegetable broth
- 1 onion diced
- 1 tsp.oil
- 200 g cheese spread low fat
first put the broccoli and the potatoes with the broth in a big pot, that fits at least 3 liters, bring to boil and let simmer on medium heat until the vegetables are cooked.
While the soup is cooking, heat up the oil in a pan and put in the onion. After a minute add the meat and let it cook. Add salt and pepper to taste.
When the soup is cooked, mix everything with an immersion blender, add the cheese spread and stir.
Now just add the meat-onion mix and give it a last bit of salt and pepper if needed.
Serve with freshly grated parmesan, if you wish.
