broccoli-tarragon-soup with cheese-balls

  • for the soup:
  • 1 tbsp. olive oil
  • 1 kg broccoli I use frozen
  • 1 large onion diced
  • 2 garlic cloves diced or pressed
  • 1,2 liter vegetable broth
  • 1- 1,5 tsp.tarragon dried
  • salt pepper, chili to taste
  • for the cheese balls:
  • 2 tbsp. grated parmesan
  • 2 tbsp. cottage cheese
  • 1 tbsp curd
  • 2 tbsp. flour
  • ½ tsp. tarragon
  • salt and pepper to taste


  • heat the oil in a pot that can hold at least 3 liters and glaze the onion and the garlic
  • after 2-3 minutes add the tarragon and let it roast a bit.
  • add the potatoes and let them also roast for 2 minutes.
  • add the broccoli and then also the broth.
  • bring to boil and let it cook for around 10 minutes until the broccoli is cooked.
  • meanwhile mix the ingredients for the cheese-balls in a foodprocessor and set to cool in the fridge.
  • when the soup is cooked mix it with an immersion blender
  • form little balls with two tablespoons and add serve them with the soup. They will melt a bit into the soup and combined it will create a great flavour
  • If you want it to be a bit more creamy and thick, you can add two potatoes and also cook and mix them with the other ingredients
