Creamy curry-pasta with, chicken, mushrooms and spring onions

  • 1 tsp. olive oil
  • 100 g scallions cut in rings
  • 1 small onion diced
  • 250 g mushrooms cut in slices
  • 350 g carrots cut in slices
  • 250 g chickenbreast cut in pieces
  • 300 g maccheroni
  • 15 g butter
  • 15 g flour
  • 200 ml vegetable broth
  • 1/2 yellow curry powder
  • salt and pepper to taste


  • first heat up the oil in a pan and add the onions. fry them for a minute and add the scallions
  • stir and let cook for 2-3 minutes.
  • In this time you can heat up salty water in a pot (it should fit at least 1.5 liters). As soon as it boils add the pasta and the carrots. Stir and let cook until the pasta is done (around 7-8 minutes).
  • Meanwhile fill the mushrooms and the chicken into the pan with the onions and cook until done.
  • Fill everything from the pan into a small bowl and set aside.
  • Put the butter into the pan and bring to melt on medium heat.
  • When it´s melted stir in the flour and stir some more. Add the broth and stir until everything is combined and getting creamy.
  • Now spice with the curry powder and tadd he ingredients from the bowl back into the pan. Stir thouroughly and add salt and pepper to taste (and more curry if you wish)
  • The pasta and carrots should be done, so drain them and also add them into the pan.
  • Stir everything, taste and serve with fresh scallions sprinkled on top.
