aromatic stuffed peppers-soup

  • 1 kg ground beef lean
  • 2 onion chopped
  • 3 garlic cloves pressed
  • 1,6 kg peeled tomatoes in a can
  • 1,5 liters vegetable or beef broth/stock
  • 1 bay leaf
  • 4 pepper bells chopped into bite size pieces
  • 250 g brown rice
  • 1 tsp. sugar
  • salt and pepper to taste


  • Take a pot that fits at least 5 liters.
  • first heat up a bit of oil in the pot and add the onion, let it fry for a bit and then add the ground beef in two or three portions and cook it until it´s brown and crumbly.
  • Now add the garlic, stir and add salt and pepper to taste.
  • deglaze with the broth and add the tomatoes from the cans and the bay leaf. Stir and bring to boil.
  • Once it´s boiling crush the tomatoes a bit with your spoon and then add the rice and the pepper bell.
  • simmer for around 30 minutes until the rice is cooked. Reduce this time accordingly if you use parboiled rice.
  • serve with a bit of sour cream if you like
