aromatic stuffed peppers-soup
- 1 kg ground beef lean
- 2 onion chopped
- 3 garlic cloves pressed
- 1,6 kg peeled tomatoes in a can
- 1,5 liters vegetable or beef broth/stock
- 1 bay leaf
- 4 pepper bells chopped into bite size pieces
- 250 g brown rice
- 1 tsp. sugar
- salt and pepper to taste
Take a pot that fits at least 5 liters.
first heat up a bit of oil in the pot and add the onion, let it fry for a bit and then add the ground beef in two or three portions and cook it until it´s brown and crumbly.
Now add the garlic, stir and add salt and pepper to taste.
deglaze with the broth and add the tomatoes from the cans and the bay leaf. Stir and bring to boil.
Once it´s boiling crush the tomatoes a bit with your spoon and then add the rice and the pepper bell.
simmer for around 30 minutes until the rice is cooked. Reduce this time accordingly if you use parboiled rice.
serve with a bit of sour cream if you like
