Arugula salad with tomatoes, pine nuts and parmesan

  • 125 g arugula
  • 150 g cherry tomatoes
  • 20 g pine nuts
  • 20 g parmesan planed
  • dressing
  • 100 ml buttermilk
  • ½ tsp. olive oil
  • a dash of fresh lemon juice
  • 1 pinch of sugar
  • herbs to your liking - i used parsley and chives
  • salt and pepper to taste


  • roast the pine nuts in a pan without fat and be careful, they get too dark very quick and sudden
  • clean the arugula and the tomatoes and cut the tomatoes in halves.
  • mix together and add the dressing and the pine nuts and stir until everything is well mixed.
  • Serve with the planed parmesan
