start with the zucchini sticks
preheat your oven to 180°degrees celsius
cut the zucchini in wedges, salt them slightly and set aside für 2-3 minutes. during this time you can already make the sauce e.g.
now the zucchini should have drained some water, dry the wegdes and toss them in a bowl in which you already mixed the parmesan and the breadcrumbs. Roll them until the parmesan mixture is spread evenly on the zucchini wedges
now place them beside each other on a baking pan and bake for around 20 minutes. they should be golden brown.
for the patties
knead the meat with the other ingredients and add salt and pepper to taste.
form the patties (around 125g each) and fry them in a pan until they are brown and cooked. Now place them on a plate, put a slice of cheese on them and wrap the plate in tinfoil to keep them warm.
Now put the buns (the buns here are frozen buns) in the oven to bake them.
tarragon-sauce
mix all the ingredients together and ad salt and pepper to taste. If it´s too sour, add some more honey.
tomato-pepperbell-salsa
mix the tomato and pepperbell cubes and add salt and pepper to taste
balsamico-onions
in a medium sized pan heat some oil and glaze the onions. Only brown them a little, not too much.
When glazed stir in the sugar and let cook for another minute on medium heat.
Deglaze with the balsamico and stir. turn to low heat and let cook until the balsamico sickens and the onions are soft. Don´t forget to stir sometimes.
Now the buns should be done and you can start to make your burger!
